If I were to want to create pinatas using hand drawn logos similar to the ones used in professional sports, and then sell them, would I be violating copyright or trademark laws?

The question is, "how similar?"

Chances are, though, if the hand-drawn logos are similar enough so that people could reasonably confuse them with the actual logos, you would be in violation of trademark laws.
