Vacation Payoff

After quiting my job as a mechanic, I still have 5 days of vacation left. The owner of the shop won't pay me the vacation stating I owe him that money for parts. Although he has already taken a check for parts from me after I left. He is unable to supply with me a listing of the parts totally this amount. How do I collect this money... or am I entitled to it? ND
