I've been looking at the different work visa catagories and also green card applications in reference to working in a field where there is a shortage of workers, however it may come under unskilled work i'm not sure which visa i should apply for or whether a prospective employer must apply for me?

You generally do not apply for the visa, you apply for a job and then the company will sort out the visa for you.
