When I was young I did something stupid and got arrested in New York. Luckily, I was granted a young offender status, which means that after my case got sealed once my probation was over. The problem is that because I was a New Jersey resident, I served my probation in NJ.

Did everything involving my arrest including my probation get sealed?

You mean "Youthful Offender".

Usually but sometime mistakes are made. You can run a background check on yourself and see what it shows.

Is this related to an employment application?
