What is the name of your state? TX

A 501(c)(3) has been formed in California under a certain name (let's call it ABC, INC.). This non profit will be doing business in Texas under a different name (XYZ). Does a new 501(c)(3) need to be set up in Texas under this name, or do we just have to qualify the existing California non-profit to do business in Texas? If so, would we qualify it in Texas under the ABC, INC. name and then do an assumed name for XYZ?

Check with the Texas secretary of state's office. Probably you only need to qualify to do business in Texas, but the Secretary's office will have the latest and greatest info you need.
