N.C Fighting a speeding ticket

I was pulled over for speeding, and I want to fight it. I think I might have a case but I’m not sure. I was going up a hill when pulled over, I also noticed a same color car speeding by me when the sheriff put on his lights, I was amazed he was pulled over, but said nothing and took the ticket. I did ask to see his radar to see if it was correct, he said that was not the law to show that. I have no prior speeding or other violations on my license and I do not want to receive a point. He clocked me as going 15 miles over the speed limit but said I was actually going faster. I specifically remember being in the fast lane going slow and trying to get over, my car doesn’t go up hills fast.
What if my officer doesn’t show, I had to put my case off because of out of state biz. Does that affect my case, and how can I use that to my advantage.
