I am curious how shows like American Idol protect their idea? what if you presented an idea like that to an investor or a television company...couldn't they just turn around and use it as their own?

Talent search shows are not exempt from copying of the format if it is done in a general way. However, such shows as American Idol protect their copyright (and Big Brother, Last Action Hero, Joe Millionaire etc) by copyrighting the specific concept of the show, not the genre.
