Although the OP did not mention it I believe you can get married in Canada without being a resident. My boss did this exact thing last October. Not sure if GA recognizes it but what does that have to do with custody that is not yet in a court order?
The problem is that you can't enter Canada with a minor child (and OP clearly wants to take the child with her) without the other parent's permission. I realize that a lot of people get away with it when driving across the border, but I've been asked to provide a letter from the other parent every time I flew in to Canada.
