What is the name of your state (only U.S. law)? NY

Hi I've been interning at my present company for the last 3 years. They gave me some bs about how my internship term has ended and you can't keep an intern for longer than 3 years, i'd believe that but my coworker the only other intern at the company has only been there for 2 years and is also getting let go. I'm pretty sure the company just realized they coudln't afford us and pretty much didn't need us anymore because some of the other staff have more freetime on their hands. I wanted to end my employment anyway since I just graduated college and would like to take a break but I also needed to get paid(bills to pay), now that they let me go I can receive unemployment. Anyway, my controller gave us a termination date of may 1st last week. Today i come in and receive an email saying ur termination date has changed from may 1st to may 21st. I'm sure they changed it just cuz they need us to box stuff or some other clerical thing that theyd rather not do at that time. But what if i had made plans or something you know? Is there anything i can do about the termination date change? I want to at least complain to her but I don't want to risk getting fired or something so that I wouldnt be eligible for unemployment. Thanks guys

additional information: i've been ahving to put 2% into a retirement fund for the past year, am i really still considered an intern/temp?
