What is the name of your state (only U.S. law)? California
I own a piece of property 50-50 with my son. I want to give him my
1/2 - and was told to do a grant deed. Do I do one for only my 1/2
Interest -in which case he keeps the old one and the new one?

YOU can only grant your interest. Now it might be cleaner if the TWO of you grant the property jointly to him singly. Getting a lawyer to draft and record it is probably not a bad idea.
