My son is thinking about filing bankruptcy. If he changes his mind after filing can he cancel it?

Depends where it is in the process. It's not like canceling your pizza before they start to make it. This would be a more appropriate question for your son to ask his bankruptcy attorney.

Does he know you are asking strangers on the internet questions about his finances? Assuming he is an adult you have no business doing that.
