What is the name of your state (only U.S. law)?
California

My wife's sister is going through divorce, and our car is financed (title) under her and my wife's name. Its not paid off yet.
My wife and I are making the payments since the car was purchased. Could her husband come after our car after divorce.? Could he claim that car?
We do have a proof that the payments were going through our bank accounts.

Regards

Was the car purchased during the marriage? If so, it MAY be considered an asset and marital property, regardless of whether or not the STBX's name appears on the title. Does that entitle him to take the car? No, but he MAY be able to claim part of the value of that car as being community property purchased during the marriage.

Technically yes, he could go after the car...or at least after 1/2 of his wife's share of the car. However, if the car is still financed its not very likely that the car has any actual equity (since cars are depreciating assets) therefore its not very likely to be an issue.

How much is still owed on the car and what is it's Blue Book value?
