Already made payment arrangements and now the debt collectors want more

What is the name of your state (only U.S. law)? Wyoming. In March of 2015 I went to the hospital. Now I'm in collections. We went to court in December of 2015 and agreed upon a payment. Now the debt collectors are calling me again saying I'm not paying enough and that I need to send them receipts of my pay stubs and all my bills to determine if they can raise my monthly payment. Is this legal? Or since we already went to court can they not demand my receipts?

Are you under any court order to keep the judgement creditor apprised of your finances? If not, you don't have to show them anything if they ask on the phone.

If you can post, word for word with any identifying information redacted, the actual agreement or court order under which you are currently paying the creditor, that will be helpful. There are times when a creditor can be restrained to accept an amount they agreed to as repayment of a debt, but they are not as numerous as common knowledge would have you believe.

As to if the creditor can change the agreement based on differing circumstances is a far different issue than if they can demand the OP turn over the information they seek.
