Employer wants me to sign a lesser paying contract. What can I do?

An offer letter doesn't (necessarily) rise to the level of a contract.

I agree that contracts need to be reviewed in their entirety ... but even with only the snippet to go on, there is clearly an offer and acceptance and (apparently) a capacity to enter into a contract, and consideration. Employment resulted from the mutually signed document.
