Now, you are correct in that FLORIDA doesn't require insurance. But, was that in the contract that you signed that you would have it insured?
I'm going to have to go with my gut and say no to that. Reason being, I was able to take the bike off the lot with no insurance. (Though back then I bout it about a week later and rode with insurance... basically until I couldn't afford it.)

I doubt that they'll bother to pick up the bike, it's worthless. They can't sell it so they'll try to get their money out of you. You've pretty much ruined your credit rating.

Good luck

.... Zinger I do believe what you are saying, but then why was I able to with no problems? I mean, at the scene of the accident they even told me I didn't need it. Along with other officers at different times, I have two friends right now that are riding with an endorsement, no insurance, and financing. So If what you say is what the law is here, then I'll need to tell them asap.
It's not the law, it's your CONTRACT. Your lender can impose penalties or charge you the amount it costs them to get it, and rest assured you will not get preferential rates.

From real life experience...
In OH, I have a friend that financed a van. The engine went out and he left it parked for a few years, making payments until he could not afford to and stopped. When they came to repo it and saw it dirty, wrecked, on 2 flat tires, they left it also. Called him religiously for 6 months trying to negotiate a discounted price, like was done with you. He told them he was disabled and couldn't even support his family with what the household had coming in. The van sits..... the loan awaits... for years. I hope your cosigner likes you, if they are collectible still.
