Make yourself available to take to or, at least, pick up the child at appointments so the therapist talks to you rather than grandmother.
I would be concerned if grandmother is overbearing and sees herself as parent rather than grandparent. Since mother does not appear to be communicating with the therapist in person before the child's session, grandmother is the information conduit. Why would the grndmother be involved in therapy if there was not some concern about that relationship? The issue would be the same if OP's SO were to replace grandmother.
What is legal may not be in the best interest of the parents and child. IMO, OP needs more information about the reasons for the therapy, grandmother's involvement, and professional review of what is appropriate in their specific situation.
