What is the name of your state (only U.S. law)? AL

I read this on an Insurance site...
A residence is considered vacant when it is without contents or occupants.

There are no occupants, but there is still contents in the house.
I also have active ADT Service; I have a friend that lives across
the street that does a regular walk through, and watches over the
property; The ac comes on when it gets hot, and goes off when it
cools down; I have lights that come on at night, and go off when the
sun comes up; There is a car sitting in the drive-way.

Does insurance still consider this a vacant home?

Unless somebody resides there insurance companies will generally
Consider it as vacant.

Even periods of extended vacation where the home is not lived in can cause it to be considered vacant. There is no defined time that allows that to be a clear cut determination usually.
