Americanized version of Ensalata Caprese...I prefer the original Italian one with fresh mozzarella.

Thickly slice two large vine ripe tomatoes and lay them out on a plate. Thickly slice two balls of fresh mozzarella and layer them on top of the tomatoes.
Drizzle with extra virgin olive oil and red wine vinegar (or balsamic).
Sprinkle with salt and pepper and top with chopped fresh basil.
I have an awesome recipe that is basically that, but cold chicken dressed in a creamy basil sauce is sliced and served on top. You're right, it's gotta be the fresh mozz.

All this talk of chopping up poor Basil disturbs me. I admit that he's often fresh, and even pungent at times, but please reconsider. In his heart, he is a good man, and deserves more than to be some cannibalistic garnish for a salad!

Bue...there are an awful lot of Americans who don't have a clue what fresh mozzarella is...just saying.

One of my summer projects is to try to make my own...

Yeah...But I grew up 15 miles from the North End and BOTH my kiddo's are 1/2 Sicilian. AND my parents NEVER gave us canned, processed or reproduced fake food.

Hon...You do realize that "most" of the people in the mansions will still live there after the "rapture" and will NOT allow us to take a look-see?

No, I don't mean "fresh" as in "not canned or fake", I mean not aged mozzarella. Fresh mozz is soft and white and has a lot of moisture, unlike the aged kind you shred or slice for sandwiches or pizza. Which is fine for sandwiches and pizza. But for a Caprese? Fresh. Or buffalo. Oh, man, I can't wait for the June tomatoes now.

Okay. I get you. In my area when you get Mozzarella it is soft and fresh. I did not think that other parts of the country would not have the same. It is just so common here.

Shame on me for ASSuming.

And I am just lovin' the user name PITA.:D

You don't have the aged kind of semi-hard mozzarella for slicing or shredding?? Wow, I didn't know it was a regional thing. It's actually very good, you should try some next chance you get. Melted on a sub, it's really good.

Yeah...We have that (plEAZZE!!lol) but when discussing a salad I, again, ASSumed fresh was understood. :)
